Blueberry Peach Banana Smoothie Recipe
Ingredients: 1/2 cup frozen blueberries, 1 frozen banana, 1/2 cup frozen peach slices, and 1/2 cup water. 
Method: Thaw the frozen fruit in cold water until it’s all just a little mushy. Cut the banana up into smaller pieces so it’ll blend more easily. Put all of the ingredients into a blender, blend to your desired consistency, top with chia seeds, then enjoy!

A breakfast of Golden Kiwi and freshly squeezed Orange Juice, and a Mango Soy-Yogurt Parfait featuring Passionfruit, Blueberries and Frozen Grapes. Mangoes are nearly going out of season here so I’m trying to enjoy them whilst I still can, but I know I’ll miss the delicious, inimitable sweetness of the Thai Nam Dokmai variety. On another note, I just discovered the awesomeness that is frozen grapes! They’re like fresh, ice-cold candies that burst in your mouth…mmm.

A light, healthy dinner with a vegetarian platter featuring Grilled Asparagus, Baked Ricotta, Tomato Tabbouleh Salad, Soft Boiled Eggs with Dukkah and the most deliciously fragrant Grilled Eggplant with Yogurt and Sundried Tomatoes. We found this at a healthy mediterranean restaurant in Hua Hin and I was so excited by all the wonderful vegetarian and vegan offerings that my mother has promised us a trip back there, just for the food.
